Ingredients

Instructions

  1. Preheat the oven to 160°C (302°F).
  2. Beat the 5 eggs with the 150g white sugar using an electric mixer.
  3. Sift in the 200g plain flour and fold it in with a whisk.
  4. Grease a large cake pan with butter and dust it with a little flour.
  5. Pour the batter into the pan and bake for about 1 hour. Do not open the oven while it bakes.
  6. Once the sponge has cooked and cooled, cut it into mini portions with a round cutter.
  7. Cut each mini portion into 3 even slices. Brush the top of the bottom layer lightly with mango juice.
  8. Spread a generous amount of mascarpone over the layer, covering the base and edges, then add 2 spoons of strawberry jam (or another jam). Optionally add thin strawberry slices.
  9. Place the next layer on top, brush it with mango juice and repeat the mascarpone and jam step.
  10. Add the final layer and brush it with mango juice.
  11. Pipe a small amount of mascarpone on top, then decorate with a raspberry or blueberry, an edible flower and a dusting of icing sugar.
