- Allspice¼ tsp
- Salt½ tsp
- Egg2
- Milk½ cups
- Vanilla3 tsp
- Butter · softened11 tbsp
- Apple · grated1
- Almond · sliced¼ cups
- Cream cheese4 oz
Instructions
- Preheat oven to 350°F. Grease and flour two 8- or 9-inch round cake pans; line the bottoms with parchment rounds if you have them.
- Mix the apple filling ingredients in a small bowl and set aside.
- Whisk all the dry ingredients together in a large bowl.
- Add the eggs, milk and vanilla and beat on medium speed for about 2 minutes, until smooth and creamy.
- Cut the butter into tablespoons and add to the batter. Beat on low for 1 minute, scrape the sides, then beat on medium-high for 1 1/2 minutes. Scrape the bowl and mix 30 seconds more on low.
- Divide the batter evenly between the two pans. Spread the apple mixture evenly over ONE of the cakes.
- Bake 15-20 minutes, until a toothpick inserted in the center comes out clean.
- Cool in the pans for 10 minutes, then turn out onto racks right side up to cool completely.
- Beat the cream cheese, butter, cinnamon and vanilla on medium speed until well blended. Sift in the powdered sugar half a cup at a time until the frosting is the texture you like.
- Stack the plain cake on the apple cake so the apple filling is in the middle. Frost with the cinnamon cream cheese frosting.
