How to Make Authentic Limoncello

By Cooking With Ayeh

Ingredients

Instructions

  1. Wash the lemons and peel off only the yellow zest, avoiding the white pith.
  2. Put the peels in a large glass jar or bottle, pour in the alcohol, seal tightly and store in a dark place for 25 days.
  3. After 25 days, strain out the peels through a fine mesh strainer set over a large bowl.
  4. Pour the water into a large pot on medium heat. When small bubbles appear but it is not boiling, add the sugar.
  5. Stir with a wooden spoon to dissolve the sugar, then turn off the heat after 2 minutes.
  6. Keep the pot on the stove and stir continuously for 3 to 5 minutes until all the sugar has dissolved.
  7. When the syrup is warm but not yet room temperature, add the lemon-infused alcohol and stir constantly for a couple of minutes.
  8. Let the mixture cool to room temperature, then use a funnel to pour the limoncello into glass bottles.
  9. Tighten the lids securely and refrigerate for a few hours before serving.
