How To Make Baked Croquette (Recipe) 揚げないコロッケの作り方(レシピ)
Ingredients
- Potato2 lb
- Onion1
- Vegetable oil · divided6 tbsp
- Ground beef1 lb
- Black pepper · ground
- Salt¾ tsp
- Panko2 ½ cups
- Butter1 tbsp
- Egg3
- Flour½ cups
- Tonkatsu sauce
Instructions
- Boil peeled, cut russet potatoes in water covering them by 1 inch (2.5 cm) until a skewer passes through easily, about 20 minutes.
- Meanwhile, finely dice the onion and sauté it in 1 Tbsp oil over medium-high heat until soft. Add the ground beef and cook until no longer pink.
- Season the meat with black pepper and ¼ tsp Diamond Crystal kosher salt, then take it off the heat.
- Toast the panko with 2 Tbsp oil over medium heat until golden brown, then tip it into a bowl or shallow dish to cool.
- Drain the potatoes, mash them, and season with black pepper, ½ tsp Diamond Crystal kosher salt and 1 Tbsp unsalted butter.
- Mix the meat into the mash. Leave out any meat juices so the potatoes stay dry enough to shape.
- While the mixture is warm but not hot, shape thick oval patties about ½ inch (1 cm) thick, then chill them for 15–30 minutes.
- Heat the oven to 400°F (200°C); for convection, reduce by 25°F (15°C). Coat each patty in flour, shake off the excess, dip in beaten egg, then coat in panko.
- Place the patties on a wire rack over a baking sheet, or on parchment paper, and bake at 400°F (200°C) for 10 minutes.
