Ingredients

Instructions

  1. Heat the oven to 325°F and line an 8×8 inch pan with parchment, then brush it with butter.
  2. Grind or chop the raw, unsalted nuts and mix them in a bowl with the sugar, cinnamon and lemon zest.
  3. Layer 8 phyllo sheets in the pan, brushing butter between each pair of sheets (2 sheets, butter, repeat until 8 sheets are down).
  4. Sprinkle one third of the nut filling over the phyllo.
  5. Lay 2 more sheets on top, brushing each with butter, then add another third of the filling. Repeat until the filling is used up.
  6. Finish with 2 sheets of phyllo, buttering between them as in the bottom layers, until the phyllo is used up. Brush the top with butter.
  7. Cut the baklava into small diamonds with a short sharp knife before baking.
  8. Bake 30 minutes, then lower the oven to 300°F and bake another 45–60 minutes, until golden and puffed.
  9. In the last 15–30 minutes of baking, combine the water, 6 tablespoons sugar, lemon juice and citrus rind in a medium pot and stir until the sugar dissolves.
  10. Bring to a boil over medium-high heat, then reduce to medium and simmer uncovered for 15 minutes.
  11. Stir in the honey, simmer 5 more minutes, then take off the heat and remove the rind.
  12. Pour the hot syrup over the hot baklava, let it cool to room temperature, then refrigerate.
