How to Make Banh Khot (Vietnamese Savory Mini Pancakes)
Ingredients
- Rice flour1 cup
- Cornstarch1 tbsp
- Coconut milk200 ml
- Turmeric · powder½ tsp
- Salt¾ tsp
- Shrimp14
- Black pepper · ground0.13 tsp
- Scallion2
- Lettuce
- Vegetable oil
- Chili pepper
Instructions
- Whisk all the batter ingredients together and let it rest for at least 20 minutes, longer if possible.
- In a small bowl, season the shrimp with salt and pepper and set aside.
- Heat a banh khot or aebleskiver pan on medium-high and add a little oil to each well. Stir the batter before each pour, since the flour settles. Spoon in batter and let it overflow slightly for crispier edges. Sprinkle with green onions and dried shrimp if using. Cover and cook for about 8 minutes on medium-low.
- Remove the lid. Add a shrimp to each pancake and top with more green onions. Drizzle oil over the onions and around the rims. Cover and cook until the shrimp is cooked through, about 1 minute. Uncover and cook about 2 more minutes, to your liking.
- Use a sharp metal spoon to lift out the pancakes, starting with the outside edges. They should release easily.
- Serve with leafy greens, herbs and sweet chili sauce.
