How to Make Biscuits and Gravy | Hilah Cooking
Ingredients
- Biscuit
- Flour1 ¾ cups + 3 tbsp
- Baking powder2 tsp
- Baking soda½ tsp
- Salt½ tsp
- Butter4 tbsp + 1–2 tbsp
- Buttermilk1 cup
- Chorizo8 oz
- Milk2 cups
Instructions
- Preheat the oven to 450°F.
- Whisk the flour, baking powder and salt together, then cut in the butter.
- Add the milk and mix quickly.
- Drop large spoonfuls onto an ungreased baking sheet to make 6-8 biscuits, then bake for 12-15 minutes.
- While the biscuits bake, cook the sausage over medium heat in a medium skillet until cooked through, keeping it in large chunks. Remove it with a slotted spoon and set aside, keeping as much grease in the pan as possible.
- Add enough butter to the skillet to give about 2 tablespoons of fat. Once melted, sprinkle in the flour.
- Cook the flour in the fat over medium heat for 60-90 seconds, until it smells toasty.
- Whisk in half the milk until smooth, then add the remaining milk and whisk again.
- Simmer until thickened, stirring occasionally.
- Return the sausage to the gravy or serve it on the side. The biscuits should be ready about when the gravy is.
