How to Make BRUSCHETTA Like an Italian
Ingredients
- Fresh
- Basil
- Sourdough bread
- Garlic2
- Extra virgin olive oil
- Salt
- Black pepper
Instructions
- Wash the tomatoes thoroughly, then chop them roughly but small into a bowl, keeping all their juice.
- Add a generous amount of extra virgin olive oil, salt, pepper and one crushed garlic clove.
- Add the fresh basil, either torn into pieces or left whole.
- Mix with your hands or a spoon and let rest for 10 to 20 minutes, at room temperature or in the fridge.
- Slice up to 2 pieces of bread per person. Toast them in a very hot skillet, a toaster, or under the grill/broiler in the oven on baking paper, until golden and lightly marked, turning over to brown the other side if using a skillet.
- While the bread is hot, rub the garlic clove over the top side of each slice so it slightly melts.
- Spoon tomato juice from the bowl onto each slice, then add the tomatoes, more juice and a few basil pieces.
- For cherry tomatoes: after the garlic and a drizzle of olive oil, halve each tomato and squeeze the juice onto the bread by pressing each half cut side down until the bread is covered, then add basil.
