Ingredients
- Beef · thinly2 lb
- Beer12 oz
- Onion · sliced1 + 2–3 bunches
- Lime¼ cups
- Garlic · minced¼ cups
- Worcestershire sauce¼ cups
- Salt1 tsp
- Chili powder1 tsp
- Black pepper½ tsp
- Choose some or all
- Jalapeño chili6–12
- Poblano chili2–3
- Nopales3–4
- Chorizo1 lb
- Corn tortilla
- Cheese
- Salsa
Instructions
- Put the meat in a large bowl with the marinade ingredients, mix well, cover and marinate at room temperature for about one hour. Meanwhile, start the charcoal.
- When the charcoal is ready and the grill is very hot (about 450°F), arrange the vegetables and the chorizo, chorizo skin-side down. Cover, with vents open. Grill about 10 minutes, until the chorizo is cooked on the bottom and the vegetables are softening. Turn everything.
- Cover and grill another 5-7 minutes, until the vegetables are cooked and the chorizo is brown and crispy. Peppers should be well blackened and nopales turn olive green.
- Keep the vegetables and chorizo warm in a low oven (200°F) while you grill the meat.
- Cover the grill and let it reheat to about 450°F.
- Grill the carne asada in single layers, about a minute or two per side, until browned with grill marks. Work in two batches, keeping cooked meat warm in the oven.
- Let the grill cool to around 300-350°F to cook the quesadillas and heat the tortillas for tacos.
- Slice the carne asada against the grain, slice the nopales and peppers, and chop the chorizo. Serve with salsa and the roasted jalapeños and bulb onions.
