Ingredients

Instructions

  1. Put the devil red chillies, serrano chillies, bay leaves, garlic, sea salt, olive oil, smoked paprika and lemon juice in a grinder and blend to a fine paste. This is the sauce.
  2. Cut the chicken into 8 pieces after removing the fat. Add the sauce and mix well to coat.
  3. Heat a few pieces of charcoal over a gas flame until red. Place them in a small bowl set inside the bowl of chicken. Pour some olive oil over the charcoal, and as soon as it smokes, cover the chicken bowl with a lid. Let it smoke for 30 minutes.
  4. Heat a pan over moderate heat and add the marinated chicken pieces. Cook until browned.
  5. Scatter fresh parsley leaves over the pan, dab them in the marinade, and baste the chicken with it. Turn the pieces until they are browned on all sides.
  6. Turn off the heat. The chicken is ready to serve.
