How to Make Chicken Stir Fry | Hilah Cooking
Ingredients
- Chicken stock½ cups
- Soy sauce3 tbsp
- Rice wine vinegar1 tbsp
- Garlic · minced1 tbsp
- Ginger · peeled minced1
- Brown sugar2 tsp
- Cornstarch2 tsp
- Sesame oil1 tsp
- Broccoli1 bunch
- Chicken thigh · boneless skinless1–1 ¼ lb
- Rice flour¼ cups
- Salt¼ tsp
- Oil for frying1 cup
- Chili pepper · dried2–10
- Cashew · sliced½ cups
Instructions
- Mince the garlic and ginger and mix them into the sauce ingredients. Set aside.
- Cut the broccoli heads into florets about 1.5 inches long and 0.75 inch wide. Roll-cut the stems into bite-sized pieces. Steam for 3 minutes (or microwave in batches for 1 minute each) until bright green, then set aside.
- Trim excess fat from the chicken thighs and cut into pieces no larger than 1 inch. Toss in a large bowl with 1/4 cup rice flour or cornstarch and the salt.
- Heat oil in a wok or very large skillet until a chile sizzles when dropped in. Fry a couple of chiles and a third of the chicken until golden brown on all sides, about 3 to 4 minutes total. Move to a tray to rest, then fry the rest of the chicken in two batches.
- Pour off all but about 2 tablespoons of oil and reheat. Add the cashews and remaining dried chiles and toast for 60 seconds.
- Add the broccoli and stir-fry for 60 to 90 seconds.
- Return the chicken to the pan and cook for another 60 seconds. Push everything to one side.
- Pour in the sauce and let it bubble and thicken, then stir everything together to coat. Serve immediately.
