How to Make Choripanes | Hilah Cooking
Ingredients
- Chimichurri sauce
- Red wine vinegar6 tbsp
- Garlic · minced2 tbsp
- Bay leaf1
- Salt1 ½ tsp
- Chili flake · dried flakes½–1 tsp
- Oregano · dried1 tsp
- Black pepper · coarsely ground1 tsp
- Olive oil½ cups
- Parsley · finely chopped1 cup
- Chorizo2 lb
- Baguette2
Instructions
- Make the chimichurri first: in a large bowl, whisk together everything except the oil and parsley. Once combined, slowly whisk in the oil to emulsify, then stir in the parsley. Let it sit at room temperature for 30 minutes.
- Heat the grill: high for indoor grills, medium-high for outdoor grills.
- Grill the chorizo on all sides, turning about every 2 minutes, until the casings are crisp and the sausages begin to split.
- Set the sausages on a cutting board and cut each one lengthwise.
- Place the cut sides down on the grill for 2 more minutes, until cooked through with some char on the insides. This may take 10 to 15 minutes depending on the grill's heat.
- Slice the baguettes lengthwise and fill with the sausage.
- Generously spoon chimichurri over the sandwich, then cut into 4-inch lengths to serve.
