Ingredients

Instructions

  1. Peel the shrimp (skip if already peeled).
  2. Mix the shrimp with cornstarch by hand in a bowl.
  3. Slice the onion thinly and cut the green onion into 1.5-inch pieces.
  4. Spread out the rice noodles on a board and separate them by massaging for 60-90 seconds, avoiding thick clumps.
  5. Heat the wok on the highest setting for 3-5 minutes until it smokes, then add the vegetable oil.
  6. Add the shrimp and cook 60-90 seconds in total, flipping halfway, until they turn crisp red/orange. Remove to a bowl.
  7. Add more oil to the wok with the onion and cook 20-30 seconds until fragrant.
  8. Add the noodles and cook for about 9-10 minutes total, gently tossing and flipping with chopsticks until they turn slightly golden yellow.
  9. After about 4 minutes of cooking the noodles, add the light soy sauce, shrimp, green onion, chicken bouillon and bean sprouts, and keep gently stirring. Add the bean sprouts only in the last 2-3 minutes.
  10. Add sesame oil to taste and serve.
