Ingredients

Instructions

  1. Line a tortilla press with plastic wrap and preheat a dry heavy skillet or comal over medium heat.
  2. Mix the masa harina and salt in a bowl.
  3. Stir in about 1/2 cup of water, adding more in small amounts and kneading by hand until a soft dough forms that holds together in a ball without sticking to your hands. If too dry, add a few drops of water; if sticky, add a little more masa harina.
  4. Roll the dough into 8 balls about the size of golf balls.
  5. When a few drops of water sizzle on the skillet, press the balls into tortillas.
  6. Cook one or two at a time: about 1 minute on the first side, then 30 to 60 seconds on the other side.
  7. Wrap the tortillas in a clean cloth to keep them warm while you cook the rest.
