- Lemon¼ cups + ½ tsp
- Whole wheat flour2 cups
- Baking powder2 tsp
- Baking soda½ tsp
- Salt¼ tsp
- Cranberry2 cups
- Chopped nuts½ cups
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Cream the egg and butter together. Beat in the sugar on medium speed for about a minute until light and fluffy.

- Whisk the flour with the dry ingredients, then add to the wet mixture gradually on low speed until just combined. Scrape the sides and make sure no flour or egg is trapped underneath. The batter will be very thick; if needed, add an extra tablespoon of water.
- Stir in the zest, cranberries and nuts.
- Spread the batter in the loaf pan and bake for 45 minutes, or until a toothpick inserted in the centre comes out clean.
