HOW TO MAKE CREPES AT HOME | Easy Crepes Recipe Nonna Style

Ingredients

Instructions

  1. Crack the eggs into a large bowl, opening only the top of each shell so the eggs slide out cleanly.
  2. Whisk the eggs vigorously for at least 5 minutes until small bubbles form on the surface.
  3. Rinse out an eggshell, fill it with water and add the water to the eggs. Repeat four times in total.
  4. Add a generous pinch of salt and 2 tablespoons of extra virgin olive oil, and whisk for another 3 minutes.
  5. Add a portion of the sifted flour and mix well. Add more flour only if the batter is too thick.
  6. Aim for a smooth batter that is not runny but still has some body. The amount of flour depends on the size and freshness of the eggs.
  7. Test the batter by scooping some up with a large spoon and pouring it back in.
  8. Heat a small-medium deep pan over medium heat. Pour in some olive oil, let it heat, then roll the pan so the oil coats the base and edges. Wipe off the excess with a paper towel, leaving a thin film.
  9. Ladle in about half a scoop of batter for each crepe and cook it in the pan.
