How to make Crepes | French Crepe Recipe
Ingredients
- Flour1 cup
- Salt½ tsp
- Egg2
- Milk1 ¼ cups
- Butter2 tbsp
Instructions
- Sift the flour and salt into a medium bowl to remove lumps.
- Melt the butter in the microwave or a small saucepan and set it aside to cool.
- In a smaller bowl, crack in the eggs, add the milk and whisk well until no stringy bits remain.
- Add one third of the egg-milk mixture to the flour and whisk until no lumps remain. Repeat with another third.
- Whisk in the remaining egg-milk mixture and the melted butter.
- Cover and refrigerate for at least 30 minutes or overnight to relax the batter.
- Whisk the batter briefly before cooking.
- Heat a large frying pan or crepe pan over medium heat. Grease it with a very small amount of butter, then pour in 1/3 cup of batter and tilt the pan to spread it evenly.
- Cook over medium-low heat for about 1 minute, until the top looks set. Flip and cook the other side for about 30 seconds.
- Repeat with the remaining batter, adjusting the heat if the crepes cook too fast or brown too much.
- Fill the crepes as you like, then roll them up or fold them into quarters.
