Instructions

  1. Bring a pot of water to a boil over high heat. Meanwhile, peel the potatoes and cut them into fries about 1/4 inch thick.
  2. Once boiling, add two large pinches of salt, some vinegar and the potatoes. Boil until fully cooked but still firm, about 10 minutes. Set a paper towel-lined baking sheet nearby.
  3. Drain the potatoes onto the lined sheet and let them dry for at least 5 minutes.
  4. Heat the oil in a large wok or deep pan to 400°F/204°C. Divide the fries into three small batches.
  5. Lower each batch into the oil with a spider or slotted spoon and fry for 50 seconds (timed), then drain on a separate paper towel-lined sheet.
  6. Repeat for the remaining batches, then let the fries cool for 30 minutes or freeze them before the second fry.
  7. Heat the oil back to 400°F/204°C over high heat. Lower half of the fries in and fry until crisp, lightly golden and floating, about 3 to 4 minutes.
  8. Drain onto a paper towel-lined bowl and season immediately with salt. Repeat with the second half.
  9. Keep finished fries crisp on a wire rack over a baking sheet in a 200°F/93°C oven while cooking the rest.
