How to Make Crispy Plantain Chips at Home

Ingredients

Instructions

  1. Heat enough oil for deep frying in a large deep pan to about 350°F (175°C).
  2. Trim both ends of the plantains, cut a shallow slit along the skin and peel.
  3. Slice the plantain with a mandoline straight into the hot oil, moving the mandoline so the slices spread out. Stir right after slicing to separate any pieces that stuck together.
  4. Fry about 1 to 1½ plantains at a time, depending on pan size, for 8 to 12 minutes, turning every 2 to 3 minutes, until golden and firm. Time varies with slice thickness and ripeness.
  5. Lift the chips out with a spider or slotted spoon onto a paper-towel-lined tray. Season with salt while hot and let cool completely; they crisp further as they cool.
  6. Let the oil return to temperature between batches, then repeat with the remaining plantains.
  7. Once fully cool, store in an airtight container.
