How to Make Crispy Sweet Potato Chips
Ingredients
- Sweet potato
- Canola oil · for frying
- Saltto taste
Instructions
- Peel the sweet potatoes and slice them very thinly, about 1 to 1.5 mm thick, using a mandoline with its guard.
- Rinse the slices in a large bowl of cold water several times until the water runs clear.
- Lay the slices on paper towels and blot dry. A salad spinner can be used first.
- Heat the oil in a deep pot to 325°F (165°C).
- Add a batch of slices to the hot oil, without overcrowding the pot.
- Fry for 7 to 10 minutes, stirring occasionally, until the bubbling slows and the oil sounds quieter.
- Remove the chips just before they look too brown, as they will darken a little more after frying.
- Drain on a strainer or wire rack and season immediately with salt, shaking gently to coat.
- Let the chips cool completely so they crisp up, then fry the remaining slices in batches.
