Ingredients

Instructions

  1. Deseed and peel the pepper and onion. Finely slice the pepper and half the onion. Very finely slice the chilli, then put all of these in a bowl with the cloves, vinegar and a good pinch of salt. Scrunch together to make a pickle and set aside.
  2. Finely chop the remaining onion half. Put it in a medium pan over medium-low heat with a spoonful of pork dripping or a little oil and the Cajun seasoning.
  3. Fry for 8-10 minutes, stirring now and then, until sweet and lightly golden. Add the beans with their juice.
  4. Bring to the boil, mash slightly and season well. Simmer gently on low heat for a few minutes to thicken, without letting them dry out.
  5. Meanwhile, cut the pork and any leftover crackling into 1 cm dice. Put them in a medium frying pan over medium heat with a splash of oil, sprinkle with the paprika, and fry for 5-8 minutes until dark and crisp.
  6. Warm the taco shells according to the packet instructions and shred the lettuce.
  7. To serve, fill each taco with lettuce, beans and crispy pork. Squeeze the pickle to remove excess liquid, add a small handful to each taco, and top with a spoonful of yoghurt.
