How to Make Dorayaki (Japanese Red Bean Pancake Recipe) with Nutella
Ingredients
- Egg2
- Flour100 g
- Baking soda½ tsp
- Sugar50 g
- Honey1 tbsp
- Vegetable oil
- Tsubu-an
- Banana
Instructions
- Beat the eggs in a bowl. Add the sugar and mix well, then add the honey and mix well.
- Sift the cake flour and baking soda into the bowl and mix quickly until just combined. Do not overmix.
- Add the water and mix until smooth. Do not overmix.
- Cover with plastic wrap and refrigerate for 30 minutes.
- Heat a little oil in a pan over low heat. Pour in 2 tablespoons of batter and cook until bubbles appear on the surface. Flip with a spatula and cook until the other side is browned.
- While still hot, place the pancake in a closed container or wrap it in plastic wrap to keep it moist, then make the next pancake.
- For each sandwich, spread the tsubu-an filling on one pancake, top with a second pancake and press the edges to close. Nutella and banana slices make a tasty alternative filling.
- Wrap each dorayaki in plastic wrap to keep it moist. Nutella versions are best kept in the fridge, where the filling firms up.
