Ingredients

Instructions

  1. Slice the eggplant crosswise into 1/3-inch slices and pat dry.
  2. Whisk the eggs and flour together in a shallow bowl.
  3. In another shallow bowl, combine the breadcrumbs, oregano, salt and pepper.
  4. Dip the eggplant slices in the egg mixture, then coat them in the breadcrumbs. Rest them on a rack at room temperature for 10-30 minutes.
  5. Meanwhile, split the rolls, place them on a baking sheet, and top half of each with two slices of mozzarella. Put them in a 200°F oven to melt the cheese and warm the rolls.
  6. Heat 2 tablespoons of oil in a large skillet over medium heat. Fry the eggplant in a single layer for about 3-5 minutes per side, until golden and tender. Drain on a rack and sprinkle with Parmesan while hot. Fry the rest, adding oil if needed.
  7. Pour off all but 1 teaspoon of oil from the skillet. Carefully add the sauce and heat until bubbling.
  8. Top the cheese on each roll with eggplant slices and sauce, then add basil leaves. Serve immediately.
