How To make Eggs Benedict! Hilah Cooking
Ingredients
- Hollandaise sauce
- Egg7
- Butter10 tbsp
- Lemon1 tbsp
- Saltto taste
- Hot sauce
- English muffin2
- Bacon4
- Asparagus
Instructions
- Put the egg yolks and 4 1/2 teaspoons of water in a metal bowl set over a pot of simmering water (the bowl must not touch the water) over medium-low heat. Whisk for about 5 minutes until thickened and the whisk leaves trails.
- Melt the butter and set it aside.
- Slowly whisk the melted butter into the yolks in a steady stream. When half is added, reduce the heat to low and add the rest, leaving the milky solids behind.
- Whisk for another 30 to 60 seconds until the sauce thickens.
- Off the heat, stir in the lemon juice, salt to taste and a dash of hot sauce if using. Keep covered over warm water until serving.
- Toast the English muffin halves and grill the Canadian bacon under the broiler. Place a muffin half on a plate, top with bacon and a poached egg, then drizzle with hollandaise.
- Serve with sauteed spinach or asparagus if you wish.
