Ingredients
- Blue cheese50 g
- Cheese50 g
- Mascarpone cheese50 g
- Pecorino cheese3–4 tbsp
- Penne200 g
- Cream80 ml
- Salt1 tbsp
- Walnut
Instructions
- Boil 5 liters of water in a very large pot.
- Once boiling, add a tablespoon of rock salt and let it dissolve, then add the pasta. Cook it according to the packet instructions.
- While the pasta cooks, put a pan on the stove and warm it over medium-low heat.
- Add the milk, gorgonzola and stracchino to the pan, breaking the stracchino into pieces so it melts.
- Stir gently and slowly so the cheese does not burn, and keep stirring until everything is well combined.
- When the pasta is ready, scoop out a mug of pasta water and set it aside.
- Drain the pasta and add it to the pan, then stir quickly to coat it with the sauce.
- With the pan still on the heat, add the mascarpone and 1/3 of the pasta water, and stir constantly for about 30 seconds until well mixed and melted.
- Take the pan off the heat, add the pecorino and stir well.
