How To Make French Buttercream
Ingredients
- Egg5
- Sugar1 cup
- Butter2 cups
- Salt0.13 tsp
- Coffee1 tsp
- Chocolate chip1 cup
Instructions
- Whisk the egg yolks in a stand mixer on medium-high until thick and pale, a few minutes.
- Meanwhile, heat the water and sugar in a small saucepan without stirring over medium-high heat until it reaches 238°F/115°C, about 5 minutes. Keep the mixer on medium and pour the hot syrup slowly into the yolks.
- Once all the syrup is in, whisk on high for 5 to 7 minutes until thick and pale and just lukewarm to the touch.
- Add the butter 1 to 2 tbsp at a time, mixing about 15 to 20 seconds after each addition and scraping down the bowl often. The mixture will look split at first; keep going and it will thicken and come together.
- Add the melted chocolate, salt and coffee extract, then mix for a few minutes until smooth and fluffy.
