Ingredients

Instructions

  1. Soak the short grain rice in 5 cups of water for at least 5 hours.
  2. Drain the soaked rice for at least 30 minutes, until no water pools remain in the colander.
  3. Put about half of the soaked rice and 1/8 tsp salt into a blender. Blend on high speed for at least 3 minutes in total, pausing 2-3 times to scrape down the sides.
  4. Check the powder: it is fine enough when it turns pasty when rubbed between the fingers. A slight grittiness is fine.
  5. Sift the powder through a large sieve to remove any large unground pieces.
  6. Store the rice powder in the fridge for up to 2 days, or in the freezer for a few months.
