How To Make Gingerbread Pancakes | Hilah Cooking
Ingredients
- Molasses2 tbsp
- Butter · melted¼ cups
- Sugar2 tbsp
- Egg1
- Buttermilk½ cups
- Apple · coarsely grated½ cups
- Flour1 cup
- Baking soda¼ tsp
- Salt¼ tsp
- Ginger · ground½ tsp
- Cinnamon¼ tsp
- Allspice0.13 tsp
Instructions
- Combine the molasses, melted butter and sugar in a large bowl.
- Mix in the egg and buttermilk until well combined.
- Stir in the grated apple.
- Whisk the dry ingredients together, add them to the wet mixture, and stir until just combined.
- If making ahead, refrigerate the batter up to 8 hours and let it come to room temperature before cooking.
- Heat a griddle over medium heat until a dropped drop of water sizzles. Lightly grease it.
- Drop the batter by 1/4 cup measures, spreading if needed, to make cakes about 4 inches across. This makes 8 pancakes.
- Cook about 2 minutes, until the edges look dry and a few bubbles appear on top that pop and leave craters. Watch closely, as they burn quickly.
- Flip and cook another 2 to 3 minutes.
- Serve hot. If needed, keep warm in a 200°F oven on a baking sheet.
