Ingredients

Instructions

  1. Peel the potatoes and boil them for about 10 minutes, until very soft.
  2. Drain them and press them through a potato masher.
  3. Spread the potatoes on a wooden board with a fork so they cool.
  4. Heat a generous amount of olive oil in a saucepan. Add the chopped carrot and onion and cook until softened.
  5. Add the tomato, a couple of basil leaves, the celery and sea salt, then simmer for about 30 minutes.
  6. Make a well in the cooled potatoes and crack the egg into it.
  7. Mix the egg into the potatoes with a fork or your hands, then add the flour a little at a time and knead until you have a dough.
  8. Knead the dough thoroughly until it reaches the right consistency and forms one large mass.
  9. Roll a small piece of dough back and forth with your palms into a long coil.
  10. Cut the coil on a diagonal into small pieces to shape the gnocchi.
  11. Keep unused dough covered with a large bowl so it does not dry out.
  12. Place the gnocchi on a floured flat tray, dust the tops with flour, and repeat with the remaining dough.
  13. Bring about 5 litres of water to the boil in a large pot and add a sprinkle of rock salt.
  14. Gently drop in the gnocchi without stirring. Once they float to the top, wait about 1½ minutes, then drain in a large colander.
