Ingredients

Instructions

  1. Line a large baking tray with parchment paper.
  2. Mix the flour, sugar, yeast and salt in a stand mixer with a dough hook.
  3. Heat the milk and water in the microwave until lukewarm, then stir in the butter and vanilla.
  4. On low speed, slowly add the milk mixture and mix for 2 minutes. Scrape under the dough with a spatula to make sure everything is mixed.
  5. Increase to medium speed and mix 6 to 8 minutes until the dough is shiny and smooth. It should be slightly wet and saggy.
  6. Oil the bowl, add the dough, turn to coat, cover tightly with plastic wrap and a towel, and proof at room temperature until doubled, 1½ to 2 hours.
  7. Roll the dough on a floured surface to ½ inch thick. Cut rounds with a 3-inch cutter, then cut the centres with a smaller cutter (about 1¼ inch). Skip the holes if you plan to stuff them. Re-roll scraps.
  8. Cover the donuts with cling film and let them rise at room temperature for 20 to 30 minutes.
  9. Preheat the oven to 350°F (180°C). Brush the tops of the donuts with melted butter and sprinkle 2 tablespoons of water into the tray.
  10. Bake for about 13 minutes, until very lightly browned.
  11. Dip warm donuts in the glaze, let the excess drip off, and set them on a wire rack.
  12. For donut holes, toss them in melted butter, then in the sugar, pumpkin pie spice and salt mixture while still warm.
  13. For stuffed donuts, pipe the Nutella, jam or pastry cream into them through a small hole in the side until they swell slightly.
