How To Make Green Chile Macaroni and Cheese | Hilah Cooking
Ingredients
- Butter2 tbsp
- Onion · diced½ cups
- Poblano chili · seeded diced1
- Garlic1 tsp
- Flour2 tbsp
- Milk1 cup
- Sour cream¼ cups
- Cheese · grated1 cup
- Salt
- Black pepper
- Macaroni pasta½ lb
Instructions
- Start a pot of water for the pasta. Cook the macaroni for about 80% of the package time, so it is al dente.
- Melt the butter in a medium saucepan. Saute the onion and pepper over medium-high heat until soft, about 5 minutes.
- Add the garlic and stir for 30 seconds.
- Add the flour and mix well. Cook for 60 seconds.
- Add half the milk and turn the heat to low. Whisk until smooth.
- Add the rest of the milk and simmer for about a minute, until thickened.
- Add 1/2 cup pasta cooking water, salt, pepper and sour cream. Mix well.
- Stir in the cheese, half a cup at a time, until fully melted.
- Drain the pasta and combine it with the sauce. If it looks too thick, add the remaining 1/2 cup pasta water.
- Cover and simmer 5 minutes, until the sauce is absorbed and the pasta is fully cooked.
- Optional: transfer to a casserole dish, top with buttered breadcrumbs and bake at 350°F for 10 to 15 minutes until crispy.
