Preparación

  1. Start a pot of water for the pasta. Cook the macaroni for about 80% of the package time, so it is al dente.
  2. Melt the butter in a medium saucepan. Saute the onion and pepper over medium-high heat until soft, about 5 minutes.
  3. Add the garlic and stir for 30 seconds.
  4. Add the flour and mix well. Cook for 60 seconds.
  5. Add half the milk and turn the heat to low. Whisk until smooth.
  6. Add the rest of the milk and simmer for about a minute, until thickened.
  7. Add 1/2 cup pasta cooking water, salt, pepper and sour cream. Mix well.
  8. Stir in the cheese, half a cup at a time, until fully melted.
  9. Drain the pasta and combine it with the sauce. If it looks too thick, add the remaining 1/2 cup pasta water.
  10. Cover and simmer 5 minutes, until the sauce is absorbed and the pasta is fully cooked.
  11. Optional: transfer to a casserole dish, top with buttered breadcrumbs and bake at 350°F for 10 to 15 minutes until crispy.
