Ingredients

Instructions

  1. Soak the corn, husks included, in water for 30 minutes to an hour while you set up the grill.
  2. Prepare a medium-hot grill at 350–400°F for direct heat.
  3. Mix the crema or mayonnaise in a small bowl with the lime juice, a tablespoon of the cotija and a little salt. Refrigerate.
  4. Grill the corn for 10 minutes per side, turning once.
  5. Put the grill cover back on, then quickly strip off most of the husks, leaving one or two layers. Don't worry about the silk.
  6. Return the ears to the grill for 5 more minutes per side.
  7. Remove all the husks; the silk should slide off easily.
  8. Brush the corn with the lime sauce, sprinkle with cheese and chili powder or Tajín, and serve hot.
