How to Make Gyudon

Ingredients

Instructions

  1. Combine the onion, dashi, sake, soy sauce and sugar in a saucepan and bring to a simmer over medium heat. Cook, stirring occasionally, until the onion softens, about 5 minutes.
  2. Add the beef and cook, stirring, until cooked through and the liquid has reduced to a concentrated broth, about 5 minutes. Stir in the ginger and simmer 1 minute more. Adjust with salt and sugar to taste.
  3. Divide the rice between 2 to 3 bowls, top with the beef and sauce, and garnish with a poached egg (if using), scallions, beni-shoga and togarashi. Serve immediately.
