How to Make Healthy Cheerios Chicken Parmigiana / Pollo a la Parmesana Sano
Ingredients
- Chicken breast1 lb
- Mozzarella cheese½ cups
- Scallion
- Cereal1 ¾ cups
- Italian seasoning2 tbsp
- Parmesan cheese · grated¼ cups
- Onion powder1 tsp
- Egg2
- Black pepper · ground
- Garlic · paste2 tbsp
- Tomato2
- Tomato sauce¾ cups
- Red onion · chopped⅓ cups
- Coconut oil
Instructions
- Preheat the oven to 400°F (405°F).
- Rinse the chicken breasts, trim visible fat and pat dry.
- Crush the Cheerios in a sealable bag into chunky crumbs, not a fine powder.
- Add the Italian seasoning, onion powder and parmesan to the bag and mix.
- Beat the eggs with garlic paste and fresh ground pepper in a bowl.
- Dip each chicken breast in the egg, then coat it in the crumb mixture in the bag. Place on a baking sheet or rack.
- Bake for 10 minutes at 400°F (405°F); if the breasts are very thick, bake at least 15 minutes, depending on thickness.
- Spray a nonstick skillet with coconut oil over medium-high heat. Add the marinara ingredients, stir quickly, then reduce or remove heat to let the sauce thicken.
- Take the chicken out of the oven and divide the sauce evenly over the breasts.
- Sprinkle about 2 tbsp mozzarella over each of the 4 breasts.
- Bake 8 to 10 more minutes, taking care not to overcook the chicken.
