Instructions
- In a small bowl, mix the oyster sauce, soy sauce, Worcestershire sauce, ketchup, sake, sugar, black pepper and sesame oil to make the yakisoba sauce.
- Heat a frying pan over medium-high. Add 1 1/2 teaspoons of cooking oil and the yakisoba noodles; fry undisturbed until crisp underneath, then flip and repeat.
- Pour the yakisoba sauce over the noodles and stir-fry until evenly coated. Set aside.
- Heat a large frying pan over medium-low. Spread 1 1/2 teaspoons of oil around the pan, then wipe off the excess with kitchen paper, leaving a thin film.
- While the pan heats, whisk the flour, dashi, sugar and mirin in a small jug until smooth to make the batter.
- Briefly lift the pan off the heat, pour in three-quarters of the batter at the centre, spread it thin with the back of a spoon, return the pan to the heat and sprinkle 1 tablespoon of bonito flakes over the wet batter.
- Layer 50 g of cabbage, 4 tablespoons of fried squid snack and 50 g of bean sprouts, one layer at a time, then drizzle the remaining batter over the top.
- Lay 100 g of thinly sliced pork belly on top, cover and steam-fry for 5 minutes.
- Meanwhile, mix the Worcestershire sauce, oyster sauce, ketchup, honey and soy sauce to make the okonomiyaki sauce. Set aside.
- Remove the lid, flip the okonomiyaki, cover again and cook the other side for 5 minutes until the pork is cooked through. Slide it onto a large plate.
- Whisk 1 egg with a pinch of salt in a bowl until combined.
- Wipe the pan clean, add a little oil and spread it, wiping off the excess. Pour in the egg and swirl to coat the base.
- When the egg is about 80% cooked, place the cooked yakisoba on top and press lightly. Put the okonomiyaki on top, pork side in the middle, crepe side up.
- Use a spatula to loosen the edges, then carefully flip everything onto a plate so the egg is on top and the crepe underneath.
- Generously coat with the okonomiyaki sauce, sprinkle with 1 tablespoon of chopped green onion and add the optional egg yolk.
