Ingredients

Instructions

  1. Soak the tomatoes in a vinegar and water bath for about 10 minutes, until you can taste and smell the vinegar.
  2. Remove the seeds and put the tomato flesh in a stock pot, straining in the juice and leaving only the seeds behind.
  3. Set the pot over medium heat with the lid on until it boils.
  4. Remove the lid and simmer gently for about 4 hours, until the liquid has reduced by about one-tenth of the starting amount. Turn off the heat.
  5. Add the beets to the reduced tomatoes, then blend until smooth and thick.
  6. Return the mixture to a pot and cook on low heat for 10 minutes, or until it reaches a thick paste texture.
  7. Let it cool completely, then portion into plastic wrap and store, ideally in the freezer.
