Preparación

  1. Toast the corn tortillas under a low broiler for 1-2 minutes per side until crisp, or bake them at 350 for 5-10 minutes until crisp. Set aside.
  2. Heat the oil in a skillet large enough for all the eggs.
  3. Cook the onion, jalapeño and garlic for a few minutes until soft.
  4. Add the cumin and fry for 30 more seconds.
  5. Add the tomatoes, salt and pepper.
  6. Cover, lower heat to medium-low and simmer 5 minutes until the tomatoes are soft. If the tomatoes were not juicy, add a couple tablespoons of water to make a sauce.
  7. Uncover and make a well in the sauce for each egg.
  8. Put a half teaspoon of butter in each well and crack an egg into each.
  9. Lower heat to low, cover and cook 5 minutes, or until the eggs are done to your liking. For well-done yolks, broil the pan for about a minute.
  10. Spread 1/4-1/3 cup refried beans on each tortilla, top with an egg and some sauce. Sprinkle with cilantro and cheese if desired.
