  1. Set the oven to 350°F. Cut four 8-inch pieces of foil, fold each in half lengthwise to make a rectangle about 4×12 inches, crease again lengthwise, and lay them between the cups of an upside-down muffin tin.
  2. Brush both sides of each tortilla with melted butter or spray with oil.
  3. Mix the cinnamon and sugar in a small bowl and sprinkle both sides of each tortilla with the mixture.
  4. Very lightly score one side of each tortilla on either side of the centre.
  5. Fold each tortilla in half and place it in a foil mold, scored side facing in.
  6. Bake 10-12 minutes until golden around the edges and crisp.
  7. Meanwhile, set up cooling stations by laying long chopsticks or skewers across bowls or glasses.
  8. Remove the hot tortillas carefully with tongs and hang them upside down over the chopsticks to cool and crisp for 15 minutes.
  9. Fill with ice cream and top with diced fruit.
