Ingredients

Instructions

  1. Bring a pot of water to a boil. Add the bean curd sticks and cook for 5 minutes.
  2. Add the udon noodles and cook for 4 minutes, half the package time.
  3. Meanwhile, slice the shallot, chop the broccolini into bite-sized pieces, and chop the green onion, keeping the white and green parts separate.
  4. Drain the noodles, saving 1/2 cup of the cooking water. Set the noodles aside.
  5. Mix the saved cooking water with the miso paste, soy sauce, black garlic oil and cane sugar to make the sauce.
  6. Heat a sauté pan over medium heat and drizzle in some olive oil. Cook the white part of the green onion and the shallot for a couple of minutes. Add the broccolini and sauté for another couple of minutes.
  7. Add the noodles, bean curd sticks and bean sprouts, then add the sauce and stir for a few minutes until the noodles have absorbed it.
  8. Plate and top with the green onion greens and white sesame seeds.
