Ingredients

Instructions

  1. Mix 1 Tbsp Korean soy sauce, 1 Tbsp sugar, ½ Tbsp toasted sesame oil, ½ Tbsp mirin and 1 chopped garlic clove in a bowl. Cut ½ lb beef into thin 3-inch strips, toss them in the marinade and leave for at least 10 minutes.
  2. Thinly slice ½ onion and 5 shiitake mushrooms. Cut ½ carrot and ¼ red bell pepper into thin julienne strips.
  3. Make a thin omelette: heat a large pan on medium, add 1–2 tsp sesame oil, pour in 2 beaten eggs and swirl to a thin layer. Cook about 2 minutes until just set, flip and cook another 2 minutes. Let cool, then roll and cut into thin ribbons.
  4. In the same pan without washing, heat 1–3 tsp sesame oil over medium. Cook the onion with a pinch of salt until tender, remove to a large platter. Repeat with the shiitake, then the carrot, then the bell pepper, keeping each in its own pile.
  5. Heat 1–3 tsp sesame oil in the same pan over medium, add the marinated beef and sauté until cooked through and all moisture has evaporated. Move to the platter.
  6. Bring a large pot of water to a boil and prepare a bowl of iced water. Add 1 tsp Diamond Crystal kosher salt and 12 oz spinach to the boiling water and cook 10–15 seconds. Transfer to the ice water, then squeeze out as much water as possible and add to the platter. Keep the water boiling.
  7. Boil 14 oz sweet potato glass noodles in the same water according to package directions, about 6 to 10 minutes. Drain, toss with sesame oil, and cut into shorter lengths with kitchen shears. Add to the platter.
  8. Whisk together ⅓ cup soy sauce, ⅓ cup sugar, 2 Tbsp sesame oil, 1 Tbsp white sesame seeds, 1 chopped garlic clove and black pepper. Pour over the noodles and toss with your hands until absorbed.
  9. Add the vegetables and beef and mix well. Add half the omelette ribbons and some sesame seeds and toss. Transfer to a serving dish, top with the remaining omelette ribbons and more sesame seeds, and serve warm or at room temperature.
