How to Make Jewel Macarons (Recipe) ジュエリーマカロンの作り方 (新パステルマカロン) レシピ | OCHIKERON | Create Eat Happy :)
Ingredients
- Sugar
- Almond · powder
- Pistachio
- Cream
- Egg30 g
- Butter40 g
Instructions
- Whip the egg white with an electric mixer until foamy. Add the macaron mix half at a time and mix for one minute.
- Sift in the powdered sugar and almond powder half at a time and mix well with a spatula. Macaronnage: press the spatula into the batter, scrape from the sides to the centre, and press again. Repeat until the batter drips back into the bowl slowly and continuously in a ribbon when lifted with the spatula.
- Line a baking sheet with parchment paper, placing a template under it if you have one. Fill a piping bag with batter, snip off the tip, and pipe 3.5 cm (1.4 inch) circles, making about 20. Sprinkle with jewel sugar.
- Leave at room temperature for about 30 to 60 minutes until a skin forms on the tops and the batter no longer sticks to a finger.
- Preheat the oven to 180°C (350°F). Lower the temperature to 140°C (285°F) and bake for 16 to 17 minutes. Let the macarons cool completely on the baking sheet.
- In a bowl, mix the butter with the cream mix. Spread the cream in the middle of one shell and gently place another shell on top.
- Chill in the fridge until set. Handle carefully, as the buttercream melts easily.
