How to Make Korean BBQ Ribs (Kalbi)
Ingredients
- Beef rib5 lb
- Onion1
- Soy sauce1 cup
- Red wine½ cups
- Sugar1 cup
- Garlic6–8
- Scallion3
- Sesame oil4 tbsp
- Sesame seed1 tbsp
- Black pepper1 tsp
- Plum2 tbsp
Instructions
- Rinse the ribs under water to remove bone bits, then drain. Trim any large chunks of fat.
- While the ribs drain, cut the onion into chunks (or halve it if small) and cut the green onions into shorter lengths.
- In a blender, blend the onion and ½ cup water until smooth.
- Add 1 cup soy sauce, ½ cup red wine, 1 cup sugar, the garlic cloves, green onions, 4 Tbsp sesame oil, 1 Tbsp sesame seeds, 1 tsp black pepper and, if using, 2 Tbsp green plum syrup. Blend until smooth.
- Put the ribs in a container, pour over the marinade and mix so each piece is evenly coated.
- Marinate in the fridge for at least 1 hour, up to overnight. If short on time, 30 minutes will work.
- Heat the oven broiler for 5 minutes.
- Lay the ribs on a metal grill pan and broil on the top rack for 4 minutes. Turn them over and grill for another 3 minutes.
- Serve immediately with rice and Korean side dishes.
