Instructions
- Mince one onion finely. Heat 1 Tbsp extra virgin olive oil in a large pan over medium-high heat and sauté the onion until translucent. Turn off the heat and divide the onion in half, one half for the gravy and one for the patties.
- Make the gravy: heat a small saucepan over medium heat, add ½ Tbsp extra virgin olive oil and the sliced button mushrooms, and sauté until soft. Add half the sautéed onion and stir.
- Add 1½ cups beef stock, 1 tsp Worcestershire sauce and 1 tsp soy sauce. Skim off scum and foam with a fine-mesh skimmer. Season with Diamond Crystal kosher salt to taste and ⅛ tsp freshly ground black pepper.
- Whisk 1 Tbsp potato starch or cornstarch with 1 Tbsp water in a small bowl until smooth. Pour into the gravy, mix thoroughly, and simmer until thickened. Turn off the heat and set aside.
- Make the patties: in a large bowl, combine ½ lb ground beef, ¼ lb ground pork and the other half of the onion. Add ⅓ cup panko, 1 large egg, 2 Tbsp milk, 1 tsp Worcestershire sauce, ½ tsp nutmeg, 1 tsp Diamond Crystal kosher salt and ⅛ tsp black pepper.
- Knead by hand until sticky and pale. Divide into 4 large or 6 medium portions. Toss each portion between your hands about 5 times to release air, then shape into an oval patty with a slightly rounded top. Place on a plate, cover, and refrigerate at least 30 minutes.
- Cook the patties: heat a large pan over medium heat with ½ Tbsp extra virgin olive oil. Place patties gently in the pan, in batches if doubling. Press a 2-finger indent into the centre of each. Fry about 5 minutes until browned on the bottom. Flip, cover with a lid, and fry about 5 minutes more until cooked through (depending on thickness). Meanwhile, reheat the gravy and fry 4 eggs in ½ Tbsp extr
- Serve: divide 4 servings of cooked Japanese short-grain rice among plates, top with the patties, pour the gravy over, and add a fried egg to each. Sprinkle with 1 chopped parsley sprig. Serve immediately.
- Storage: keep leftovers in an airtight container in the fridge for 3 days or in the freezer for a month.
