How to Make Mac and Cheese | Hilah Cooking
Ingredients
- Macaroni pasta2 cups
- Butter¼ cups
- Flour3 tbsp
- Mustard¼ tsp
- Salt½ tsp
- Pepper½ tsp
- Milk2 cups
- Cheddar cheese · grated1 cup
- Grated Gouda1 cup
- Parmesan cheese · grated¼ cups
- Breadcrumb1 cup
Instructions
- Boil a quart or so of well-salted water for the noodles. Preheat the oven to 375°F (190°C) and grease a 1½ or 2 quart baking dish.
- In a deep skillet, melt the butter, whisk in the flour to make a smooth paste, then add the mustard, salt and pepper. Cook over medium-low heat about 60 seconds until the flour smells toasted.
- Whisk in half the milk until smooth, then add the rest and stir, scraping the corners, until it simmers. Remove from heat and stir in the cheeses, keeping 1/4 cup Cheddar aside.
- Boil the pasta for only 3 to 4 minutes, until just beginning to soften. Drain and stir into the cheese sauce.
- Spread the mixture in the greased dish. (To make ahead, cool, cover and refrigerate, then add the crumbs before baking.)
- Sprinkle the breadcrumbs and reserved 1/4 cup Cheddar over the top.
- Bake 20 to 25 minutes until bubbling and golden brown. If starting from a refrigerated dish, bake 30 to 40 minutes.
