Preparación

  1. Boil a quart or so of well-salted water for the noodles. Preheat the oven to 375°F (190°C) and grease a 1½ or 2 quart baking dish.
  2. In a deep skillet, melt the butter, whisk in the flour to make a smooth paste, then add the mustard, salt and pepper. Cook over medium-low heat about 60 seconds until the flour smells toasted.
  3. Whisk in half the milk until smooth, then add the rest and stir, scraping the corners, until it simmers. Remove from heat and stir in the cheeses, keeping 1/4 cup Cheddar aside.
  4. Boil the pasta for only 3 to 4 minutes, until just beginning to soften. Drain and stir into the cheese sauce.
  5. Spread the mixture in the greased dish. (To make ahead, cool, cover and refrigerate, then add the crumbs before baking.)
  6. Sprinkle the breadcrumbs and reserved 1/4 cup Cheddar over the top.
  7. Bake 20 to 25 minutes until bubbling and golden brown. If starting from a refrigerated dish, bake 30 to 40 minutes.
