Ingredients

Instructions

  1. Pulse the almond flour and powdered sugar in a food processor 5 to 6 times until well combined. Pour into a medium bowl.
  2. Separate the 2 eggs, saving the yolks for another use. Whip the whites with the salt until foamy.
  3. With the mixer on high, slowly sprinkle in the ¼ cup (50 g) of sugar. When soft peaks form, add the strawberry essence and colouring, then whip until stiff peaks form.
  4. Fold half of the egg whites into the dry ingredients until combined. Add the rest and fold until the batter falls in a ribbon and a figure 8 can be drawn without breaking.
  5. Pipe 1-inch rounds about an inch apart onto a lined baking sheet. Tap the sheet on the work surface 5 times and let the macarons rest for 30 minutes.
  6. Bake at 150°C (300°F) for 15 minutes, or until the shells can be touched without smudging. Cool completely before filling.
  7. For the buttercream, beat the butter on medium speed for about 5 minutes, until light, fluffy and doubled in volume.
  8. Add the powdered sugar one cup at a time, mixing well after each addition.
  9. Add the vanilla, milk and red gel colouring and mix once more.
  10. Pipe about 1 tablespoon of buttercream onto one shell, top with another and press until the filling reaches the edges. Repeat with the rest.
