Instructions

  1. Cool the cake for about 4 hours. Preheat the oven to 350°F (180°C). Line a 6-inch (15 cm) round cake pan with parchment paper.
  2. Put the white chocolate and butter in a heatproof bowl and melt them over a double boiler, over simmering water without the bowl touching it. Remove from the heat and stir in the matcha until smooth. Gradually stir in the milk.
  3. Separate the eggs. Chill the whites for 15 minutes. Whisk the yolks with 3 Tbsp sugar until creamy and pale yellow. Add the matcha chocolate mixture and mix well.
  4. Sift in the cake flour and gently whisk until just combined. Add the salt and mix.
  5. Whip the chilled whites on medium-low speed until foamy. Gradually add 3 Tbsp sugar, then beat on high until stiff, glossy peaks form.
  6. Fold the meringue into the batter in three additions, folding gently to keep the air in, until the batter falls in ribbons when lifted.
  7. Pour into the prepared pan and smooth the top. Bake at 350°F (180°C) for 15 minutes, then reduce to 325°F (160°C) and bake for another 20 minutes. The centre should still wobble slightly.
  8. Cool completely on a wire rack for about 4 hours. Optionally chill overnight. Dust with confectioners' sugar before serving, if desired.
