Instructions

  1. If your ice cream maker needs a pre-frozen bowl, freeze it for at least 24 hours beforehand.
  2. Heat the sugar, salt and milk mixture in a saucepan over medium-low until the sugar dissolves, then take it off the heat as soon as small bubbles form at the edges. Never let it boil.
  3. Mix the 5 Tbsp matcha with 3-4 Tbsp of the warm mixture at a time, stirring after each addition until smooth and lump-free before adding more liquid, until the paste is thick and smooth.
  4. Stir the matcha mixture back into the rest of the milk mixture and whisk well.
  5. Set a fine-mesh sieve over a bowl set in an ice bath, pour the mixture through, press out any lumps, then let it cool and refrigerate, covered, for at least 4 hours.
  6. Run the ice cream maker until the bowl reaches -33°F (-36°C), about 15 minutes. Whisk the chilled mixture again, pour it in and churn for 25 minutes until thickened.
  7. Transfer the soft ice cream to an airtight container and freeze for at least 4 hours until firm.
  8. Scoop to serve. Keep in the freezer up to 2 weeks, though it tastes best sooner.
