Ingredients

Instructions

  1. Sift the flour and matcha powder into a bowl, add the sugar and salt, and whisk well.
  2. Gradually beat in the eggs and mix well.
  3. Add the melted butter and mix well.
  4. Gradually add the warm milk, mixing well, then add the vanilla if using and strain the batter through a sieve. Cover and rest at room temperature for 30 minutes.
  5. Heat a nonstick pan (or a pan lightly oiled with a paper towel) over medium heat. Pour in half a ladle of batter and swirl the pan in a circle to spread it evenly.
  6. Cook until the edges begin to dry, flip, and cook the other side for about 10 seconds.
  7. Let the crêpes cool completely.
  8. Put the whipping cream and sugar in a dry, clean bowl and sift in the matcha powder. Set the bowl over ice water and whisk until soft peaks form.
  9. Place one crêpe on a plate, spread some cream on it, and top with another crêpe. Repeat until all are used.
  10. Refrigerate for a few hours up to a day so the cream sets, then slice. Eat within the next day.
  11. Dust the top with matcha powder.
